The bark of the quinquina tree (growing mostly in Peru) is used to extract the quinine which is used to fight malaria and other ailments. Its powder is used in the making of bitter aperitifs such as the Réveil Quinquina, although in this case truffles macerated in Fine Champagne were also added to the concoction !
